Ingredients

Serves : 3
  • 2 teaspoons fresh lemon juice


  • 2 teaspoons red wine vinegar


  • 2 tablespoons olive oil


  • 1 pinch sea salt and pepper


  • 1 large Ripe Tomato, cut into chunks


  • 1/2 cucumber comma peeled and chopped


  • 1/4 medium Red Onion, thinly sliced


  • 10 large leaves of romaine lettuce hearts


  • 16 large mint leaves, optional


  • 5 oz feta cheese, cut into 3/4 inch cubes, optional


  • 1/2 cup black olives

Directions

  • In a small jar or bowl, mix the first five ingredients. Put the tomatoes, cucumber, and onion in a small bowl and sprinkle with some sea salt. Then pour one tablespoon of vinaigrette over the vegetables and toss lightly. Cut the lettuce leaves into bite-size pieces, and cut the mint Into Thin strips. Add the lettuce to the salad bowl. Add one Cube of feta to the remaining dressing and mash with fork. Pour over the lettuce and vegetables and toss. Add the feta and olives and toss
